Tim and the boys just brought some rhubarb in the other night so I made this cake. . .YUM!!! Yes marj I will make you some cake and rhubarb pie :) when you get here!!!!!
Rhubarb Cake
1 1/2 c. brown sugar
1/2 c. shortening
1c. sour milk
1 egg
1 tsp. soda
1/4 tsp. salt
2 c. flour
1 1/2 c. cut-up raw rhubarb
1 tsp. vanilla
Cream shortening, sugar, milk, vanilla and egg. Sift flour, soda and salt together, then combine with other ingredients and mix well. Stir in rhubarb. Pour into a greased 9 X 13 pan.
Topping: Combine 1/2 c. sugar, 2 Tbsp. flour, 2 Tbsp. butter, 1 tsp. cinnamon and 1/2 c. walnuts (I don't :( ) Sprinkle over top of cake batter.
Bake in oven @ 350 for 30 mins.

That sounds awesome, but I'm the only one around here who will eat rhubarb. (Maybe I could eat the whole thing myself?) :p
I'll have to make that for my Dad sometime, he loves Rhubarb! and I have been trying to find a rhubarb recipe for some time. Thanks!!
